Trứng chiên được làm theo kiểu thông thường chỉ với trứng được chiên chín sẽ gây nhàm chán lắm đấy. Chúng ta có thể biến tấu một chút bằng cách thêm vào chút nguyên liệu gồm cà rốt, nấm để tạo độ ngon và hấp dẫn hơn đấy. Trứng đập ra chén, đánh tan. Nấm kim châm cắt bỏ gốc, rửa sạch, để ráo. Cà rốt gọt vỏ, bào sợi. Ớt sừng xắt lát. Đun nóng chảo với 1 muỗng dầu ăn, cho trứng vào chiên đến khi gần chín thì đánh tơi ra rồi đổ ra dĩa. Giữ nguyên chảo, thêm dầu ăn đun nóng, cho cà rốt, ớt sừng vào xào 1 - 2 phút trên lửa lớn.
Tiếp đó cho nấm kim châm, tỏi băm vào xào cùng, nêm 1/4 muỗng muối, 1/2 muỗng nước tương vào xào 2 - 3 phút đến khi thấm hết gia vị. Cuối cùng cho trứng đã chiên vào đảo đều vài phút là xong rồi đó. Cho trứng xào ra dĩa và ăn cùng cơm nóng.
