Chả giò hải sản trứng bắc thảo là một món chả giò mới lạ, có hương vị thơm ngon, béo ngậy từ trứng bắc thảo và ngọt bùi từ hải sản cùng rau củ. Món chả giò này rất thích hợp để đổi vị cho gia đình vào những dịp tết đến xuân về hoặc nấu chiêu đãi người thân vào những bữa tiệc hoặc đám cổ. Đảm bảo hương vị sẽ khiến bạn hài lòng ngay từ lần nếm thử đầu tiên.
Để làm món chả giò này đầu tiên chúng ta tiến hành sơ chế nguyên liệu. Tôm và mực làm sạch, lấy 100gr tôm đã lột vỏ và 80gr mực đem cắt nhỏ thành hạt lựu. 50gr cà rốt, 50gr khoai môn đem bào sợi. 50gr nấm mèo ngâm nở đem thái sợi nhuyễn. 50gr miến ngâm nở đem cắt ngắn. Trứng bắc thảo lột vỏ sau đó mỗi quả cắt ra làm 6.
Trộn nhân gồm: tôm, mực, cà rốt, khoai môn, nấm mèo và miến đã sơ chế. Cho tất cả vào tô rồi cho thêm 80gr thịt băm, 15gr hành lá và 15gr ngò rí cắt nhỏ. Nêm vào tô nhân 1 muỗng cà phê bột ngọt Vedan, 1/2 muỗng cà phê muối và 1/2 muỗng cà phê tiêu xay, trộn đều phần nhân lại với nhau.
Chuẩn bị sẵn 1 gói bánh tráng bía (bánh tráng bò bía) cuốn chả giò. Trải bánh tráng ra mặt phẳng sạch, múc 1 lượng nhân vừa phải vào giữa (khoảng 1 muỗng canh nhân), thêm 1/6 quả trứng bắc thảo, sau đó gói lại và cuộn tròn chả giò. 1 mẹo nhỏ để chả giò nhìn đẹp mắt và lớp vỏ giòn hơn là sau khi gói nhân thì cuốn thêm bên ngoài 1 lớp bánh bía nữa.
Bắc chảo dầu nóng (khoảng 150 - 160 độ C), gắp chả giò vào chiên ngập dầu đến khi vàng giòn thì vớt ra thấm bớt dầu.
Vậy là bạn đã có một đĩa chả giò hải sản trứng bắc thảo giòn rụm béo ngậy và cực bắt vị rồi. Chuẩn bị thêm 1 ít rau thơm và rau sống, thêm 1 chén nước mắm tỏi ớt chua ngọt nữa là ngon không chê vào đâu được.
