Món măng xào với vị cay của sa tế, măng giòn và thịt gà thấm, thoang thoảng mùi thơm của ngò gai, dùng làm món mặn ăn với cơm. Món này thật hấp dẫn khi dùng trong những ngày mưa lạnh.
Măng tươi xé sợi, tước bỏ bớt đoạn già. Ngò gai, hành lá thái nhỏ.
Thịt đùi gà rửa sạch, thái thành từng lát vừa ăn, ướp vào bát thịt muối, tiêu, trộn đều để 30 phút cho thấm.

Tiếp theo đổ măng tươi vào xào cùng với thịt gà, dùng đũa đảo đều để măng thấm gia vị, đậy kín nắp nồi.
Sau đó bạn nêm nếm lại tùy theo khẩu vị của bạn, tắt bếp, rắc hành lá thái nhỏ và rau mùi tàu vào chảo. Đảo đều, múc ra đĩa dùng làm món mặn ăn với cơm.
